This seasoning is a staple for backyard gatherings and festive occasions, where the sizzle of barbecue mingles with laughter and conversation.

The rub offers a savory and slightly sweet profile, with garlic powder providing depth, while annatto lends a subtle earthiness and vibrant color. A hint of calamansi powder introduces a citrus tang, balanced by the warmth of black pepper and the richness of brown sugar. Ingredients

  • 2 tbspgarlic powder
  • 1 tbspannatto
  • 1 tbspbrown sugar
  • 1 tbspfine sea salt
  • 1 tspblack pepper
  • 1 tspcalamansi powder

Method

  1. In a dry skillet over medium heat, add 2 tablespoons of garlic powder, 1 tablespoon of annatto, 1 tablespoon of brown sugar, 1 tablespoon of fine sea salt, 1 teaspoon of black pepper, and 1 teaspoon of calamansi powder. Stir the mixture continuously with a wooden spoon to ensure even toasting. You'll know it's ready when you can smell a warm, nutty aroma and the annatto's color deepens slightly, which should take about 3 to 4 minutes.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the mixture to a large plate or a shallow bowl. Spread it out evenly to allow it to cool completely. This cooling step is crucial to prevent clumping when you grind or mix the spices.
  3. After the spice mixture has cooled, use a spice grinder or a mortar and pestle to grind the mixture until it reaches a uniform texture. If you don't have these tools, you can also combine the mixture thoroughly by hand in a mixing bowl, ensuring that the spices are evenly distributed.
  4. Transfer the ground or combined spice mixture into an airtight container, such as a glass jar with a tight-fitting lid. Label the container with the date to keep track of its freshness.
  5. Store the container in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture. Use this Filipino BBQ rub within a few months to enjoy its best aroma and flavor.
