Filipino Chili Salt

Filipino Chili Salt is a pantry staple that brings a fiery kick to the Filipino dining table. This versatile blend is inspired by the vibrant flavors that characterize the archipelago's culinary landscape. While it doesn't have a specific occasion tied to its use, it is a beloved addition to everyday meals, offering a taste of warmth and spice that can transform even the simplest dishes.

The blend of chili flakes, fine sea salt, garlic powder, and cumin creates a robust seasoning that delivers a punch of heat tempered by aromatic depth. Sprinkled lightly over grilled meats, roasted vegetables, or even just a bowl of rice, this chili salt elevates the familiar into something exciting and memorable.

Ingredients

  • 3 tbspchili flakes
  • 2 tbspfine sea salt
  • 1 tbspgarlic powder
  • 1 tspcumin

Method

  1. Place a small, dry skillet over medium heat. Add 3 tablespoons of chili flakes and 1 teaspoon of cumin to the skillet. Stir continuously with a wooden spoon to ensure even toasting. You will know they are ready when the chili flakes darken slightly and a warm, spicy aroma fills the air, which should take about 3 to 4 minutes.
  2. Remove the skillet from heat and immediately transfer the toasted spices to a cool plate. This prevents them from continuing to cook and potentially burning in the hot pan. Allow them to cool completely to room temperature, which is crucial for even grinding and mixing later.
  3. Once the spices are cool, combine them in a mortar and pestle or a spice grinder. Add 2 tablespoons of fine sea salt and 1 tablespoon of garlic powder to the mix. Grind or mix until the ingredients are evenly combined and the texture is consistent throughout.
  4. Transfer the Filipino Chili Salt to an airtight container. Ensure the lid is tightly sealed to maintain the blend's freshness and potency. Store the container in a cool, dark place, such as a pantry or cupboard, to protect the spices from light and moisture.
  5. For the best aroma and flavor, use the Filipino Chili Salt within a few months. This blend is perfect for adding a spicy, savory kick to your favorite Filipino dishes, enhancing their authentic taste.
