With a balanced mix of earthiness from cumin and paprika, a hint of citrus from coriander, and a punch of black pepper, this rub creates a robust flavor profile that elevates simple ingredients. The fine sea salt ensures each component stands out, making every bite a harmonious blend of savory goodness. Whether sprinkled on chicken or rubbed onto pork, it transforms ordinary meals into memorable dishes.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by setting a dry skillet over medium heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes rich and slightly nutty, which should take about 2 to 3 minutes.
  2. Once the spices are toasted, remove the skillet from the heat. Allow the spices to cool completely in the pan; this prevents them from clumping when combined with salt later. Cooling also ensures that the spices don't continue to cook, which could lead to a bitter taste.
  3. After the spices have cooled, transfer them to a bowl. Add 1 tablespoon of fine sea salt to the toasted spice mixture. Use a small whisk or a spoon to thoroughly combine the ingredients, ensuring an even distribution of flavors throughout the rub.
  4. Transfer the blended rub into an airtight container, such as a glass jar with a tight-fitting lid. Store the jar in a cool, dark place like a pantry or cupboard. This will help preserve the rub's vibrant flavors and colors.
