Filipino House Rub

The Filipino House Rub is an essential pantry staple, a versatile blend used to season everything from grilled meats to roasted vegetables. Rooted in the daily rhythm of Filipino cooking, this rub is a go-to for adding depth and warmth to everyday meals, ensuring that each dish served at the family table is infused with rich, comforting flavors.

This blend should taste like a balanced medley of earthiness from cumin, a mild heat from paprika, and a hint of citrusy brightness from coriander. The fine sea salt ties it all together, enhancing the flavors without overpowering them. Use it generously to imbue your dishes with a taste that’s unmistakably Filipino.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Set a dry skillet over medium heat and add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper. Stir the spices continuously with a wooden spoon to ensure even toasting and prevent burning.
  2. Continue toasting the spices until they release a fragrant aroma and the color deepens slightly, which should take about 2 to 3 minutes. Be attentive to the smell, as this indicates the spices are toasted and ready.
  3. Remove the skillet from the heat and immediately transfer the toasted spices to a large plate or a wide bowl to cool completely. Spreading them out will help them cool faster and prevent further cooking from residual heat.
  4. Once the spices have cooled completely, combine them with 1 tablespoon of fine sea salt in a spice grinder or mortar and pestle. Grind or mix until the blend is evenly textured and the salt is fully incorporated.
  5. Transfer the Filipino House Rub to an airtight container, such as a glass jar with a tight-fitting lid. Ensure the container is clean and dry to maintain the blend's freshness.
  6. Store the container in a cool, dark place, like a pantry or cupboard, away from direct sunlight and heat sources. This will help preserve the aroma and flavor of the spices.
  7. For optimal aroma and flavor, use the Filipino House Rub within a few months. Regularly check the blend for any signs of losing its fragrance to ensure the best quality in your dishes.
