Indian House Rub 2 is a staple pantry blend that finds its roots in everyday Indian cooking, often used to elevate simple dishes with its robust flavors. This versatile mix is not tied to a specific occasion but is a constant companion in the Indian kitchen, ready to be sprinkled over vegetables, meats, or lentils before roasting or grilling. It is a quiet hero, transforming everyday meals into something memorable.

The blend delivers a warm earthiness from ground cumin and coriander, balanced by the subtle heat of black pepper. Paprika adds a gentle sweetness, while fine sea salt ties all the flavors together, ensuring each bite is both vibrant and satisfying. With each use, it becomes a trusted ally, ever ready to enhance the familiar comforts of Indian home cooking.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Place a small, dry skillet over medium heat. Add 2 tbsp ground cumin, 2 tbsp paprika, 1 tbsp ground coriander, and 1 tsp black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. Watch for the spices to release a rich, warm aroma and the color to deepen slightly, which indicates they are toasted.
  2. Remove the skillet from the heat and immediately transfer the toasted spices to a plate to cool. This prevents the residual heat from the pan from over-toasting the spices, which can lead to bitterness.
  3. Once the spices have cooled completely, transfer them to a small mixing bowl. Add 1 tbsp fine sea salt to the bowl. Use a spoon or a small whisk to combine the spices thoroughly, ensuring the salt is evenly distributed throughout the mixture.
  4. Transfer the blended spice mix to an airtight container. Seal the container tightly to protect the spices from air and moisture, which can degrade their flavor over time.
  5. Store the container in a cool, dark place, such as a pantry or cupboard, away from direct sunlight. For the best aroma and flavor, use the Indian House Rub 2 within a few months.
