Indonesian House Rub 2 is an essential pantry blend that finds its place in the heart of Indonesian kitchens. Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by placing a dry skillet over medium heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon for about 3 to 5 minutes, or until you notice a rich, warm aroma rising from the pan and the spices slightly darken in color. This toasting process enhances the flavors by releasing the essential oils in the spices.
  2. Once the spices are toasted and fragrant, remove the skillet from the heat and transfer the spices to a large plate or a wide bowl to cool completely. Spreading them out in a thin layer will help them cool faster and prevent any residual cooking from the heat of the pan.
  3. After the spices have cooled completely, combine them with 1 tablespoon of fine sea salt in a mixing bowl. Use a whisk or a spoon to mix them thoroughly until the blend is uniform in color and texture. If you prefer a finer texture, you can briefly pulse the mixture in a spice grinder or a clean coffee grinder.
  4. Transfer the blended spices into an airtight container. A glass jar with a tight-fitting lid is ideal to protect the spices from moisture and air, which can degrade their flavor.
  5. Store the container in a cool, dark place, such as a pantry or a cupboard away from direct sunlight. This will help preserve the aroma and potency of the spice blend.
  6. For the best flavor, use the Indonesian House Rub 2 within a few months. Over time, the spices may lose some of their intensity, so it's best to make smaller batches if you don't plan to use it frequently.
