Indonesian House Rub

Indonesian House Rub is a pantry staple that anchors the diverse flavors of Indonesian cuisine. This blend reflects the islands' rich history of spice trade, bringing together ingredients that have been integral to the Indonesian table for generations. While there's no specific occasion for its use, it finds a place in everyday cooking, whether enhancing grilled meats, stews, or roasted vegetables.

The rub delivers a warm, earthy aroma from cumin and coriander, balanced by the mild heat of black pepper and the vibrant color of paprika. Fine sea salt ties these elements together, creating a seasoning that elevates any dish with a touch of Indonesian warmth and depth.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by placing a small, dry skillet over medium-low heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices gently and continuously with a wooden spoon to ensure even toasting. You will know the spices are ready when they release a warm, aromatic fragrance and the color of the paprika deepens slightly.
  2. Once the spices are toasted, remove the skillet from the heat and allow the mixture to cool completely. This cooling step is crucial to prevent the spices from clumping when combined. Spread the spices out on a plate or a sheet of parchment paper to speed up the cooling process.
  3. After the spices have cooled, transfer them to a small mixing bowl. Add 1 tablespoon of fine sea salt to the bowl. Use a spoon to mix the ingredients thoroughly, ensuring that the salt is evenly distributed throughout the spice blend.
  4. Once combined, transfer the Indonesian House Rub to an airtight container. A glass jar with a tight-fitting lid works well for this purpose. Make sure the container is clean and dry before adding the spice blend to prevent moisture from affecting the spices.
  5. Store the container in a cool, dark place, such as a pantry or cupboard, to preserve the rub's aroma and potency. For optimal flavor, use the spice blend within a few months.
