Ingredients

  • 3 tbspground allspice
  • 1 tbspnutmeg
  • 1 tbspcinnamon
  • 1 tbspfine sea salt
  • 1 tspcloves

Method

  1. Place a small, dry skillet over medium heat. Add 3 tablespoons of ground allspice, 1 tablespoon of nutmeg, 1 tablespoon of cinnamon, 1 tablespoon of fine sea salt, and 1 teaspoon of cloves to the skillet. Stir continuously with a wooden spoon to ensure even toasting and prevent burning. You will know the spices are ready when they release a rich, warm aroma and the color deepens slightly.
  2. Remove the skillet from the heat and immediately transfer the toasted spices to a cool, dry plate. Spread them out to allow them to cool completely. This step is crucial to prevent the spices from continuing to cook and potentially becoming bitter.
  3. Once the spices have cooled, place them into a spice grinder or a mortar and pestle. Grind or combine the mixture until it is evenly textured, ensuring there are no large clumps. The texture should be fine and consistent, allowing for even distribution when used as a rub.
  4. Transfer the ground spice mixture into an airtight container. Ensure the lid is tightly sealed to keep moisture out, which can degrade the spices' quality.
  5. Store the container in a cool, dark place, such as a pantry or cupboard. Exposure to light and heat can cause the spices to lose their potency and aroma over time.
