Ingredients

  • 3 tbspchili flakes
  • 2 tbspfine sea salt
  • 1 tbspgarlic powder
  • 1 tspcumin

Method

  1. Begin by setting a small, dry skillet over low heat. Add 3 tablespoons of chili flakes to the skillet, spreading them out evenly. Stir gently and continuously with a wooden spoon for about 2 to 3 minutes until the chili flakes release a warm, spicy aroma and deepen slightly in color. This toasting will enhance their flavor.
  2. Add 2 tablespoons of fine sea salt to the skillet with the chili flakes. Continue stirring for another 1 to 2 minutes. The salt may start to take on a slight golden hue, indicating it is absorbing the chili's aroma.
  3. Sprinkle in 1 tablespoon of garlic powder and 1 teaspoon of cumin. Stir the mixture constantly for another minute. You should notice a rich, savory scent as the garlic and cumin become fragrant, blending with the chili.
  4. Remove the skillet from the heat and transfer the spice mixture to a plate or shallow bowl. Spread it out to cool completely. This cooling step prevents moisture from forming when you store the blend.
  5. Once the spices are completely cool, transfer them to a spice grinder or use a mortar and pestle. Grind the mixture until it reaches your desired consistency, ensuring the ingredients are well combined.
