Jollof Seasoning

This spice blend transforms ordinary tomato and rice into the vibrant heart of any gathering. While Jollof rice often takes center stage during festive occasions and Sunday family dinners, the seasoning itself is a staple in kitchens, ready to lend its magic to weekday meals.

With a warm embrace of paprika and the earthy undertones of thyme, this blend delivers a symphony of flavors. The subtle heat from ginger and the familiar comfort of garlic powder round out the profile, creating a seasoning that is both bold and harmonious, ready to elevate any dish it graces.

Ingredients

  • 2 tbsppaprika
  • 1 tbspthyme
  • 1 tbspcurry powder
  • 1 tbspgarlic powder
  • 1 tbspfine sea salt
  • 1 tspginger

Method

  1. Place a dry skillet over medium heat and allow it to warm up for about a minute. Add 2 tablespoons of paprika, 1 tablespoon of thyme, 1 tablespoon of curry powder, 1 tablespoon of garlic powder, 1 tablespoon of fine sea salt, and 1 teaspoon of ginger directly into the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the spices release a warm, rich aroma and the paprika deepens slightly in color, which should take about 3 to 4 minutes.
  2. Once the spices are toasted, immediately transfer them to a large plate or a cool baking sheet to stop the cooking process. Spread them out evenly to allow them to cool completely. This step is crucial to prevent the spices from cooking further and becoming bitter.
  3. After the spices have cooled completely, use a spice grinder or a mortar and pestle to grind them into a fine, even powder. If you don't have a grinder, simply mix them thoroughly in a bowl to ensure that all the spices are well combined. The goal is to have a uniform blend where no single spice overpowers the others.
  4. Transfer the ground or mixed spices into an airtight container, such as a glass jar with a tight-fitting lid. Store the container in a cool, dark place, like a pantry or cupboard, to protect the spices from light and humidity, which can degrade their flavor.
  5. For the best aroma and potency, aim to use the Jollof seasoning within a few months. This ensures that the spices retain their vibrant flavors, enhancing your Jollof rice with the intended depth and complexity.
