Lebanese Zaatar Blend

Zaatar is a quintessential Lebanese blend that finds its roots in the Levantine region. It is often sprinkled over freshly baked manakish, a type of flatbread, or mixed into creamy labneh for a savory breakfast or mezze platter. This aromatic mixture is a staple in Lebanese kitchens, adding a touch of earthiness to daily meals.

The blend should be a fragrant harmony of dried thyme, tangy sumac, and nutty sesame seeds, with a hint of marjoram and a pinch of fine sea salt. Each spoonful delivers a burst of flavor that is both zesty and herbaceous, ideal for enhancing the simplest of dishes with its complex, layered taste.

Ingredients

  • 3 tbspdried thyme
  • 2 tbspsumac
  • 1 tbspsesame seeds
  • 1 tbspfine sea salt
  • 1 tspdried marjoram

Method

  1. Begin by placing a small, dry skillet over medium heat. Add 1 tbsp sesame seeds to the skillet. Stir them continuously with a wooden spoon or spatula to ensure even toasting. You'll know they're ready when they turn a light golden brown and release a nutty aroma, which should take about 2 to 3 minutes.
  2. Remove the skillet from the heat and immediately transfer the toasted sesame seeds to a plate to cool. This prevents them from continuing to cook in the residual heat of the pan, which could cause them to burn.
  3. Once the sesame seeds are completely cool, combine them with 3 tbsp dried thyme, 2 tbsp sumac, 1 tbsp fine sea salt, and 1 tsp dried marjoram in a mixing bowl. Stir the mixture thoroughly with a spoon to ensure all the ingredients are evenly distributed.
  4. If you prefer a finer texture, you can transfer the mixture to a spice grinder or mortar and pestle. Grind the blend until it reaches your desired consistency, which can range from a coarse mix to a fine powder, depending on your preference.
  5. Transfer the zaatar blend to an airtight container. Ensure the lid is tightly sealed to maintain the freshness and potency of the spices.
  6. Store the container in a cool, dark place, such as a pantry or cupboard, away from direct sunlight and heat. This will help preserve the vibrant flavors and aromas of the zaatar blend.
  7. For optimal flavor, aim to use the zaatar blend within a few months. It is perfect for sprinkling over manakish or mixing into labneh for a traditional Lebanese taste.
