Levant Zaatar Mix

Zaatar mix, a cherished staple of Levantine cuisine, finds its roots in the ancient traditions of the Middle East. This aromatic blend is integral to daily life, often sprinkled over warm bread or mixed into creamy labneh, enhancing both with its vibrant flavors. The zaatar mix is a symphony of earthy thyme, tangy sumac, and nutty sesame seeds, kissed by the subtle warmth of oregano and a whisper of sea salt. Each bite offers a delightful crunch and a complex, savory tang that lingers on the palate. This versatile seasoning is more than an accent; it transforms simple dishes into memorable experiences.

Ingredients

  • 3 tbspdried thyme
  • 2 tbspsumac
  • 1 tbspsesame seeds
  • 1 tbspfine sea salt
  • 1 tspdried oregano

Method

  1. Begin by placing a small, dry skillet over medium heat. Add 1 tablespoon of sesame seeds to the skillet, spreading them out evenly. Toast the seeds, stirring frequently, until they turn a light golden brown and release a nutty aroma. This should take a few minutes, but focus on the color and smell rather than time.
  2. Once the sesame seeds are toasted, remove the skillet from the heat and transfer the seeds to a plate to cool completely. This cooling step prevents the seeds from continuing to cook and ensures they maintain their flavor and texture.
  3. In a mixing bowl, combine 3 tablespoons of dried thyme, 2 tablespoons of sumac, 1 tablespoon of fine sea salt, and 1 teaspoon of dried oregano. Stir the mixture well to ensure that all the ingredients are evenly distributed.
  4. Once the sesame seeds have cooled, add them to the bowl with the other ingredients. Mix everything thoroughly to create a uniform blend. If you prefer a finer texture, you can use a mortar and pestle or a spice grinder to lightly grind the mixture, but this is optional.
  5. Transfer the zaatar mix to an airtight container. Make sure the container is clean and dry to preserve the freshness of the herbs and spices. Store the container in a cool, dark place, such as a pantry or cupboard, away from direct sunlight.
  6. For optimal flavor, use the zaatar mix within a few months. This blend is perfect for sprinkling over bread, mixing with olive oil for a dip, or enhancing the taste of labneh.
