Middle Eastern House Rub

Serves about 1/2 cup Spice Mix vegan, Spice Mixes

Middle Eastern House Rub

A staple in many Middle Eastern pantries, this House Rub is a versatile blend that elevates everyday cooking. It's a mix often found in homes from Beirut to Baghdad, used to season meats, vegetables, and grains. The combination of spices reflects the rich culinary traditions of the region, providing a foundation for many beloved dishes.

With its warm, earthy notes of cumin and paprika, balanced by the subtle heat of black pepper and the citrusy hint of coriander, this rub is both aromatic and flavorful. The fine sea salt ties it all together, enhancing the natural flavors of the ingredients it graces. This blend invites creativity, welcoming personalization while staying true to its roots.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by selecting a small, dry skillet to toast the spices. Place the skillet over medium heat and add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they are ready when the aroma becomes rich and the color of the spices slightly deepens, usually within a few minutes.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the spices to a plate to cool completely. This step is crucial as it prevents the spices from continuing to cook and potentially burning, which would result in a bitter taste.
  3. After the spices have cooled, combine them with 1 tablespoon of fine sea salt in a mixing bowl. If you prefer a finer texture, you can use a spice grinder to blend them evenly. Make sure the mixture is uniform in color and texture, indicating that the spices and salt are well combined.
  4. Transfer the blended spices into an airtight container, such as a glass jar with a tight-fitting lid. Store the jar in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture, which can degrade their flavor.
  5. For optimal aroma and flavor, aim to use the Middle Eastern House Rub within a few months. This spice blend is versatile and can enhance a variety of dishes, bringing a warm, earthy flavor characteristic of Middle Eastern cuisine.
