Ingredients

  • 2 tbspcinnamon
  • 1 tbspcardamom

  • 1 tspfine sea salt

Method

  1. Begin by placing a small, dry skillet over low heat. Add 2 tablespoons of cinnamon, 1 tablespoon of cardamom, 1 teaspoon of cloves, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know the spices are ready when they release a warm, aromatic scent and the color deepens slightly, which should take about 3 to 5 minutes.
  2. Once the spices are fragrant, remove the skillet from the heat and transfer the spices to a cool, clean plate. Spread them out in a single layer to allow them to cool completely. This step is crucial to prevent any residual heat from continuing to cook the spices, which could lead to bitterness.
  3. After the spices have cooled, it's time to grind them. If you have a spice grinder, use it to process the spices into a fine powder.
