Shio Koji

Serves 4 to 6 vegan

Shio Koji

Shio Koji is a traditional Japanese seasoning made from fermented rice koji, salt, and water. It's a staple in many Japanese households, used to enhance the umami flavor in various dishes. This home version captures the essence of how a Japanese family cook prepares it, with salt measured by hand and fat added generously.

The taste of Shio Koji is subtly sweet and salty, with a rich, savory depth that can transform simple ingredients into something special. It's a versatile condiment, perfect for marinating meats, adding to soups, or even as a dressing for vegetables, bringing a touch of Japanese flavor to any meal.

Ingredients

  • 200 grice koji
  • 70 gfine sea salt
  • 200 mlwater
  • 1 tspkoji
  • 1 tspsugar

Method

  1. Begin by measuring 200 g of rice koji and 70 g of fine sea salt. Place a dry skillet over medium heat and add the rice koji. Toast the rice koji gently, stirring occasionally, until it becomes fragrant and slightly golden. This should take a few minutes, and you'll notice a nutty aroma when it's ready.
  2. Once the rice koji is toasted, remove the skillet from the heat and allow it to cool completely. This cooling step is crucial to prevent any residual heat from affecting the next ingredients. Transfer the cooled rice koji to a clean bowl.
  3. In a separate bowl, combine the 70 g of fine sea salt with 1 tsp of sugar. Stir these dry ingredients together until they are well mixed. This will help to evenly distribute the flavors throughout the Shio Koji.
  4. Add the cooled rice koji to the salt and sugar mixture. Stir thoroughly to ensure that the salt and sugar are evenly coating the grains of rice koji. This mixture should feel slightly coarse and damp from the salt.
  5. Gradually pour in 200 ml of water into the rice koji mixture, stirring continuously. The water will help dissolve the salt and sugar, creating a brine that will aid in the fermentation process. Ensure that all the rice koji is submerged and well-mixed.
  6. Transfer the entire mixture to a clean, airtight container. Seal the container tightly to prevent any air from entering, which could disrupt the fermentation process. Store the container away from direct light, in a cool, dry place.
  7. Allow the Shio Koji to ferment for about 7 to 10 days, checking it daily. Stir the mixture once a day to promote even fermentation. You'll know it's ready when the mixture has a pleasant, slightly sweet aroma and the rice koji grains have softened significantly.
  8. Once fermented, the Shio Koji can be used as a marinade, seasoning, or sauce base. Keep it stored in the refrigerator to maintain its flavor and extend its shelf life.
