This blend is the secret to achieving the distinctive tartness that characterizes this staple.

Expect a vibrant balance of flavors: the tamarind's sour punch, the savory depth of tomato and onion powders, and a subtle kick from chili flakes, all harmonized by sea salt. This seasoning transforms any stew into a symphony of tangy warmth, faithfully echoing the authentic taste of a classic sinigang.

Ingredients

  • 2 tbsptamarind powder
  • 1 tbsptomato powder
  • 1 tbsponion powder
  • 1 tbspfine sea salt
  • 1 tspchili flakes

Method

  1. Place a dry skillet over medium heat and add 2 tbsp tamarind powder, 1 tbsp tomato powder, 1 tbsp onion powder, 1 tbsp fine sea salt, and 1 tsp chili flakes. Stir constantly with a wooden spoon to ensure even toasting, which will enhance the flavors and release the oils in the spices. Continue stirring until the mixture becomes fragrant and the chili flakes turn a slightly darker shade, indicating they are toasted.
  2. Remove the skillet from the heat and transfer the toasted spice blend to a large plate or a wide bowl. Spread it out evenly to allow it to cool completely, which prevents moisture from forming and clumping the blend.
  3. Once cooled, use a mortar and pestle to grind the mixture into a fine, even consistency. If you don't have a mortar and pestle, you can combine the spices thoroughly by mixing them in a bowl with a spoon, ensuring that each spice is evenly distributed throughout the blend.
  4. Transfer the Sinigang Spice Blend into an airtight container, such as a glass jar with a tight-fitting lid. Store it in a cool, dark place, like a pantry or cupboard, to maintain its potency and prevent the spices from losing their aroma.
  5. For the best flavor, use the Sinigang Spice Blend within a few months. Its vibrant aroma and flavor are ideal for creating a tangy and savory base for traditional Filipino sour soup.
