Suya Spice Mix

Suya spice mix hails from the bustling streets of Nigeria, where it transforms ordinary skewers into vibrant, mouth-watering delights. This peanut rub is a staple for grilled meats, often enjoyed as street food or during lively gatherings. The mix reflects the dynamic spirit of West African grilling and brings a touch of its fiery character to any occasion.

Expect a symphony of flavors: the nuttiness of ground peanuts mingles with the warmth of ginger and the heat of chili flakes, balanced by smoky paprika and a whisper of onion. It's a bold, punchy seasoning that clings to the meat, creating a delicious crust that crackles with every bite.

Ingredients

  • 3 tbspground peanuts
  • 2 tbspginger powder
  • 1 tbspchili flakes
  • 1 tbsppaprika
  • 1 tbspfine sea salt
  • 1 tsponion powder

Method

  1. Begin by placing a dry skillet over medium heat. Add 3 tablespoons of ground peanuts to the skillet. Stir continuously with a wooden spoon to ensure even toasting. You'll know the peanuts are ready when they turn a light golden brown and release a nutty aroma.
  2. Remove the skillet from heat and allow the peanuts to cool completely. This step is crucial as grinding warm peanuts can result in clumping due to the release of oils.
  3. Once the peanuts are cool, combine them with 2 tablespoons of ginger powder, 1 tablespoon of chili flakes, 1 tablespoon of paprika, 1 tablespoon of fine sea salt, and 1 teaspoon of onion powder. Use a spice grinder or a mortar and pestle to blend the mixture until it reaches a uniform texture.
  4. Transfer the Suya spice mix to an airtight container. Ensure the container is clean and dry to prevent any moisture from affecting the mix.
  5. Store the container in a cool, dark place, such as a pantry or cupboard. This will help preserve the flavors and aroma of the spice mix.
  6. For the best aroma and flavor, use the Suya spice mix within a few months. This ensures that the spices remain vibrant and enhance your grilled skewers as intended.
