While not tied to a specific occasion, it serves as a staple, ready to enhance everyday dishes with its vibrant aroma and depth. This rub is a modern adaptation, drawing from traditional Vietnamese flavors and global spices, making it a cherished go-to for home cooks seeking a quick burst of flavor.

Expect a harmonious balance where earthy cumin and smoky paprika meet the citrusy hint of coriander, all elevated by a touch of black pepper and sea salt. This blend transforms grilled meats, roasted vegetables, or even simple stir-fries, adding a warm, aromatic layer that complements without overpowering.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by setting a small, dry skillet over medium heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to prevent burning. Toast them until they release a fragrant aroma and the color deepens slightly, which should take about 2 to 3 minutes.
  2. Once the spices are toasted, remove the skillet from the heat and transfer the spices to a cool, dry plate to stop the cooking process. Allow the spices to cool completely, which is crucial to prevent clumping when grinding or mixing.
  3. After the spices have cooled, combine them with 1 tablespoon of fine sea salt in a spice grinder or mortar and pestle. Grind or mix them until you achieve a uniform texture and the salt is evenly distributed throughout the spice blend.
  4. Transfer the finished Vietnamese House Rub 2 to an airtight container. Ensure the container is clean and dry to maintain the freshness of the spices.
  5. Store the airtight container in a cool, dark place, such as a pantry or cupboard, away from direct sunlight. This will help preserve the aroma and flavor of the spice blend.
  6. For the best aroma and flavor, use the Vietnamese House Rub 2 within a few months. This ensures the spices remain potent and enhance your Vietnamese dishes effectively.
