West African House Rub is a versatile pantry blend that embodies the heart of West African cooking. Found in kitchens from Lagos to Dakar, this aromatic mixture is a staple for seasoning everything from grilled meats to hearty stews. It reflects a tradition of vibrant flavors and expert seasoning, often prepared in advance and stored for daily use, ensuring that the essence of West African cuisine is always within reach.

This rub offers a warm, earthy profile with the depth of ground cumin and the sweet smokiness of paprika. The bright notes of coriander harmonize with the subtle heat of black pepper, all balanced by a touch of fine sea salt. It's a dance of flavors that enhances any dish, embracing the complexity and warmth characteristic of West African food.

Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Begin by placing a small, dry skillet over medium-low heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes rich and slightly nutty, and the paprika deepens in color.
  2. Once the spices are toasted, carefully transfer them to a large, shallow plate to cool completely. This cooling step is crucial, as it prevents any residual heat from altering the flavor balance when you combine them with the salt.
  3. After the spices have cooled, combine them with 1 tablespoon of fine sea salt in a bowl. Mix thoroughly to ensure that the salt is evenly distributed throughout the spice blend. If you have a spice grinder or a mortar and pestle, you can give the mixture a quick grind to achieve a finer texture, which helps the flavors meld together.
