Ingredients

  • 1 kilogramopapas
  • 80 mililitrosaceite
  • 1 cucharaditapaprika
  • al gustosal marina fina y pimienta negra

Method

  1. Comienza pelando 1 kilogramo de papas. Córtalas en cubos de tamaño uniforme, de unos 2 cm cada uno. Este tamaño uniforme asegura que las papas se cocinen al mismo ritmo, evitando que algunas piezas se vuelvan blandas mientras otras quedan crudas.
  2. En una sartén grande o cacerola ancha, calienta 80 mililitros de aceite a fuego medio. El aceite debe brillar ligeramente, indicando que está lo suficientemente caliente para comenzar a cocinar.
  3. Añade una cebolla finamente picada al aceite caliente. Remueve ocasionalmente y cocina hasta que la cebolla se vuelva translúcida y suave, liberando su dulce aroma. Esto debería tomar unos 5-7 minutos, y la cebolla no debe dorarse.
  4. Agrega las papas en cubos a la sartén con las cebollas suavizadas. Remueve bien para cubrir las papas con la mezcla de aceite y cebolla, asegurando una cocción y distribución de sabor uniformes.
  5. Espolvorea 1 cucharadita de paprika sobre las papas, removiendo para combinar. La paprika añadirá un color cálido y un sutil sabor ahumado al plato.
  6. Continúa cocinando las papas, removiendo ocasionalmente, hasta que estén tiernas. Puedes comprobar si están listas pinchando un cubo de papa con un tenedor; debería deslizarse fácilmente sin resistencia.
  7. Una vez que las papas estén tiernas, sazónalas con sal marina fina y pimienta negra al gusto. Remueve bien para asegurar que el sazonado se distribuya uniformemente.
  8. Sirve la Guarnición de Papas Peruanas caliente, directamente de la sartén. Este plato se disfruta mejor como parte de una comida compartida, encarnando el espíritu comunitario de la cocina casera peruana.
