Curry de Garbanzos Peruano

Ingredients

  • 400 gramosgarbanzos — cocidos
  • 1cebolla
  • 2tomates
  • 2 cucharadasaceite
  • 1 cucharaditacomino
  • al gustosal marina fina y pimienta negra

Method

  1. Comienza picando finamente 1 cebolla y 2 tomates. Escurre y enjuaga 400 gramos de garbanzos bajo agua fría para eliminar el exceso de salmuera. Esta preparación asegura que todos los ingredientes estén listos para ser añadidos a la sartén sin demora, permitiendo un proceso de cocción fluido.
  2. En una sartén grande de fondo grueso, calienta 2 cucharadas de aceite a fuego medio. Agrega la cebolla picada y cocina suavemente, removiendo ocasionalmente, hasta que la cebolla se vuelva translúcida y suave. Esto debería tomar unos 5 a 7 minutos, y la cebolla no debe dorarse sino volverse dulce y tierna, formando la base del curry.
  3. Añade los tomates picados a la sartén con las cebollas suavizadas. Incorpora 1 cucharadita de comino, permitiendo que las especias se abran en el aceite. Cocina hasta que los tomates se deshagan y se mezclen con las cebollas, creando una mezcla fragante y cohesiva. Los tomates deben perder su forma y la mezcla debe comenzar a espesar ligeramente.
  4. Agrega los garbanzos escurridos a la sartén, mezclándolos con la mezcla de cebolla y tomate. Sazona con sal marina fina y pimienta negra al gusto. Cocina los garbanzos hasta que estén bien calientes y hayan absorbido los sabores de las especias y las verduras, unos 10 minutos. Los garbanzos deben estar tiernos y la salsa debe tener una consistencia ligeramente espesa.
  5. Prueba el curry y ajusta el sazonado con más sal o pimienta si es necesario. Los sabores deben estar bien equilibrados, con el comino proporcionando calidez y los tomates añadiendo un ligero toque ácido.
