Curry de Pescado Peruano

Ingredients

  • 700 gramospescado blanco firme
  • 1cebolla
  • 2tomates
  • 80 mililitrosaceite
  • 1 cucharaditacúrcuma
  • al gustosal marina fina y pimienta negra

Method

  1. Comience limpiando 700 gramos de pescado blanco firme. Enjuague el pescado bajo agua fría corriente para eliminar cualquier escama o impureza. Seque el pescado con toallas de papel para asegurar que se dore bien más tarde. Corte el pescado en trozos grandes, de unos 5 cm cada uno, y reserve.
  2. Pele y pique finamente 1 cebolla. Corte 2 tomates en cubos pequeños, quitando las semillas si desea una salsa más suave. En una olla grande de fondo grueso, caliente 80 mililitros de aceite a fuego medio hasta que brille. Agregue la cebolla picada a la olla, revolviendo ocasionalmente hasta que se vuelva translúcida y suave, unos 3-4 minutos.
  3. Agregue los tomates en cubos a la olla con las cebollas. Incorpore 1 cucharadita de cúrcuma, permitiendo que las especias florezcan en el aceite. Cocine la mezcla hasta que los tomates se descompongan en una salsa espesa y fragante, unos 5-7 minutos. Esta base debe tener un rico color dorado de la cúrcuma.
  4. Coloque suavemente los trozos de pescado en la olla, acomodándolos en la mezcla de tomate y cebolla. Sazone con sal marina fina y pimienta negra al gusto. Cubra la olla y deje que el pescado se cocine suavemente a fuego medio-bajo. El pescado está listo cuando se vuelve opaco y se desmenuza fácilmente con un tenedor, lo cual debería tomar unos 5-8 minutos.
  5. Una vez que el pescado esté cocido, pruebe el curry para ajustar el sazón.
