Ingredients

  • 2berenjenas
  • 2tomates
  • 1cebolla
  • 80 mililitrosaceite de oliva
  • 3 dientesajo
  • al gustosal marina fina y pimienta negra

Method

  1. Comienza preparando las verduras. Pela las berenjenas y córtalas en cubos de 2,5 cm. Pica los tomates y la cebolla en trozos pequeños y uniformes. Pica finamente los dientes de ajo. Sazona los cubos de berenjena con una generosa pizca de sal marina fina y déjalos reposar durante unos 10 minutos para extraer el exceso de humedad y amargor.
  2. En una olla grande de fondo grueso, calienta 80 mililitros de aceite de oliva a fuego medio. Agrega la cebolla picada y cocina suavemente, removiendo ocasionalmente, hasta que la cebolla se vuelva translúcida y suave, unos 5 a 7 minutos. Esta cocción lenta libera la dulzura de la cebolla, esencial para el sabor base del guiso.
  3. Añade el ajo picado a la olla y remueve durante aproximadamente un minuto, hasta que se vuelva fragante pero no dorado. Luego, agrega los tomates picados. Cocina hasta que los tomates se deshagan y se mezclen con las cebollas y el ajo, formando una base espesa y aromática. Esto debería tomar unos 5 minutos, y notarás que la mezcla se vuelve jugosa y cohesiva.
  4. Enjuaga los cubos de berenjena salados bajo agua fría para eliminar el exceso de sal, luego sécalos con un paño de cocina limpio. Añade la berenjena a la olla, removiendo para cubrirlos uniformemente con la mezcla de tomate y cebolla. Cocina a fuego medio, removiendo ocasionalmente, hasta que la berenjena se vuelva tierna y absorba los sabores, adquiriendo un color rico y profundo. La berenjena debe estar suave y fácilmente perforable con un tenedor.
  5. Prueba el guiso y ajusta el sazón con sal marina fina y pimienta negra a tu gusto. El guiso debe tener un sabor equilibrado con una ligera dulzura de las cebollas y una profundidad robusta y sabrosa de la berenjena. Sirve el guiso caliente, idealmente con pan crujiente o arroz, y disfruta del espíritu reconfortante y comunitario de la cocina casera peruana.
