Ingredients

  • 700 gramoscarne molida
  • 1cebolla
  • 1huevo
  • 2 cucharadaspan rallado
  • 2tomates
  • al gustosal marina fina y pimienta negra

Method

  1. En un tazón grande, combine 700 gramos de carne molida con una pizca generosa de sal marina fina y pimienta negra recién molida. Agregue 2 cucharadas de pan rallado y 1 huevo. Mezcle bien con las manos hasta que los ingredientes estén bien incorporados y la mezcla se sienta cohesiva y ligeramente pegajosa.
  2. Forme la mezcla en albóndigas, del tamaño de una pelota de golf, asegurándose de que sean compactas y uniformes en tamaño para una cocción consistente. Resérvelas en un plato.
  3. Caliente una olla grande y de fondo grueso a fuego medio-alto y agregue una cantidad generosa de aceite para cubrir el fondo. Una vez que el aceite esté brillante, agregue cuidadosamente las albóndigas en tandas. Dórelas por todos lados hasta que desarrollen un color profundo y rico, girándolas suavemente con pinzas. Retírelas de la olla y reserve.
  4. Pique finamente 1 cebolla y agrégue a la misma olla, bajando el fuego a medio. Revuelva con frecuencia, raspando cualquier trozo dorado del fondo de la olla, hasta que la cebolla se vuelva translúcida y fragante.
  5. Pique 2 tomates en trozos pequeños y agréguelos a la olla con las cebollas. Cocine hasta que los tomates se descompongan y formen una salsa espesa y aromática, revolviendo ocasionalmente.
  6. Regrese las albóndigas doradas a la olla, acomodándolas en la salsa. Cubra la olla y deje que se cocinen a fuego lento. Las albóndigas estarán listas cuando estén tiernas e impregnadas con la salsa, que debe ser espesa y sabrosa.
  7. Pruebe la salsa y ajuste el condimento con más sal y pimienta si es necesario. Sirva las albóndigas calientes, acompañadas de arroz, pan o una ensalada fresca, asegurándose de que cada porción esté generosamente cubierta con la rica salsa de tomate y cebolla.
