Ingredients

  • 2pescados enteros
  • 2 cucharadasaceite de oliva
  • limón — en rodajas
  • hierbas — picadas
  • al gustosal marina fina y pimienta negra

Method

  1. Enjuague los 2 pescados enteros bajo agua fría corriente para eliminar cualquier escama o impureza. Séquelos bien con toallas de papel, tanto por dentro como por fuera, para asegurar un buen sellado y evitar que se cocinen al vapor durante la cocción.
  2. En una sartén grande de fondo grueso o plancha, caliente 2 cucharadas de aceite de oliva a fuego medio-alto. Una vez que el aceite esté brillante, añada un puñado de hierbas frescas como cilantro o perejil a la sartén. Permita que las hierbas chisporroteen durante unos 30 segundos hasta que liberen su aroma, infundiendo el aceite con sabor.
  3. Sazone generosamente el pescado con sal marina fina y pimienta negra por ambos lados y dentro de la cavidad. Coloque cuidadosamente el pescado en la sartén, asegurándose de que queden planos y no se superpongan. Cocine durante unos 3 a 4 minutos de un lado, hasta que la piel esté dorada y crujiente.
  4. Voltee suavemente el pescado usando una espátula, teniendo cuidado de no romper la piel. Continúe cocinando del otro lado durante otros 3 a 4 minutos. El pescado está listo cuando la carne se vuelve opaca y se desmenuza fácilmente con un tenedor.
  5. Exprima jugo de limón fresco sobre el pescado cocido, dejando que se mezcle con las hierbas y el aceite en la sartén. Pruebe un pequeño trozo de pescado y ajuste el condimento con más sal si es necesario.
