Parrilla de Pescado Peruano

Ingredients

  • 2pescados enteros
  • 2 cucharadasaceite de oliva
  • limón — en rodajas
  • hierbas — picadas
  • al gustosal marina fina y pimienta negra

Method

  1. Comience limpiando bien el pescado. Enjuague cada pescado bajo agua fría corriente para eliminar cualquier escama o impureza. Séquelos con toallas de papel, asegurándose de que estén completamente secos para ayudar a que la piel quede crujiente durante la parrilla.
  2. Prepare la parrilla precalentándola a fuego medio-alto. Mientras la parrilla se calienta, frote cada pescado con 2 cucharadas de aceite de oliva, asegurándose de cubrir tanto el exterior como las cavidades internas. Esto evitará que el pescado se pegue a la parrilla y añadirá sabor.
  3. Sazone generosamente el pescado con sal marina fina y pimienta negra, tanto por dentro como por fuera. Corte un limón por la mitad y exprima el jugo sobre el pescado, luego rellene las cavidades con hierbas frescas de su elección, como cilantro o perejil, para infundir el pescado con sabores aromáticos.
  4. Coloque el pescado en la parrilla caliente. Cocine durante unos 4-5 minutos por cada lado, o hasta que el pescado esté opaco y la piel esté crujiente. Puede saber que está listo cuando la carne se desmenuza fácilmente con un tenedor y ha pasado de translúcida a un color blanco sólido.
  5. Una vez cocido, retire el pescado de la parrilla y pruebe un pequeño trozo para verificar el sazonado. Ajuste con sal adicional si es necesario. Sirva el pescado inmediatamente, adornado con rodajas adicionales de limón para exprimir por encima, y disfrute del plato con familiares y amigos.
