Ingredients

  • 600 gramosanillos de calamar
  • 4 dientesajo
  • 2 cucharadasaceite
  • al gustochile
  • limónexprimido
  • al gustosal marina fina

Method

  1. Comience asegurándose de que los 600 gramos de anillos de calamar estén bien limpios. Enjuáguelos bajo agua fría para eliminar cualquier residuo de arena o suciedad. Séquelos con un paño de cocina limpio para eliminar el exceso de humedad, lo que ayudará a que se doren mejor en la sartén.
  2. Pele y pique finamente los 4 dientes de ajo. Coloque una sartén grande o wok a fuego medio-alto y agregue 2 cucharadas de aceite. Una vez que el aceite brille, agregue el ajo picado y una pizca de chile al gusto, revolviendo constantemente. Cocine hasta que el ajo esté dorado y aromático, teniendo cuidado de no dejar que se queme.
  3. Agregue los anillos de calamar a la sartén en una sola capa. Revuelva suavemente para cubrirlos con el aceite y los aromáticos. Cocine los calamares a fuego medio-alto, revolviendo ocasionalmente, hasta que se vuelvan opacos y firmes al tacto. Esto debería suceder rápidamente, ya que cocinarlos en exceso puede hacer que los calamares se vuelvan gomosos.
  4. Una vez que los calamares estén cocidos, retire la sartén del fuego. Exprima el jugo de un limón sobre los calamares, mezclando para combinar. Pruebe un trozo y agregue sal marina fina al gusto, asegurándose de que los sabores estén equilibrados y vibrantes.
