Budín de Leche Peruano

Peruvian Milk Pudding is a beloved staple of home kitchens across Peru, where it's often prepared for family dinners and leisurely weekend gatherings. This version captures the essence of traditional home cooking, where ingredients are measured by intuition and the table is always set for sharing. The pudding is a creamy, velvety delight, with the richness of milk and a whisper of vanilla mingling with subtle sweetness. Its texture is smooth yet holds a gentle firmness, offering an indulgent experience with each spoonful. Best enjoyed slightly chilled, it brings a comforting end to any meal, inviting everyone to linger a little longer at the table.

Ingredients

  • 1 litroleche
  • 100 gramosazúcar
  • 40 gramosfécula
  • 1 cucharaditavainilla

Method

  1. Comienza vertiendo 1 litro de leche en una cacerola mediana. Coloca la cacerola a fuego bajo y calienta suavemente la leche. Este paso asegura que la leche esté a la temperatura adecuada para disolver el azúcar y la fécula sin formar grumos.
  2. Añade 100 gramos de azúcar a la leche caliente, revolviendo constantemente con una cuchara de madera hasta que el azúcar se disuelva por completo. El azúcar proporcionará dulzura y ayudará a crear una textura suave en el budín.
  3. En un bol pequeño, mezcla 40 gramos de fécula con unas cucharadas de la leche caliente para formar una mezcla homogénea. Este paso evita que la fécula se agrupe al añadirla a la cacerola.
  4. Vierte lentamente la mezcla de fécula en la cacerola con la leche y el azúcar, revolviendo continuamente. Aumenta el fuego a medio y cocina la mezcla, revolviendo constantemente, hasta que espese. Sabrás que está listo cuando la mezcla cubra el dorso de tu cuchara y deje un rastro al pasar el dedo por ella.
  5. Una vez espeso, retira la cacerola del fuego y añade 1 cucharadita de vainilla. La vainilla añade un aroma fragante y realza el sabor del budín.
  6. Vierte la mezcla de budín en platos individuales o en un bol grande para servir. Deja que se enfríe ligeramente a temperatura ambiente, luego transfiérelo al refrigerador para enfriar. El budín estará listo cuando esté firme al tacto y mantenga su forma.
  7. Antes de servir, opcionalmente puedes espolvorear un poco de azúcar encima y usar un soplete de cocina para caramelizarlo y obtener una cobertura crujiente. Sirve el budín frío, permitiendo que la textura cremosa y el dulce sabor a vainilla brillen.
