The marinade delivers a smoky-spicy punch, with aji panca powder lending a deep, earthy warmth that mingles with the robust notes of cumin and garlic. Red wine vinegar powder adds a subtle tang, while black pepper and fine sea salt round out the flavors, creating a harmonious rub that enhances the natural richness of the beef heart. Ingredients

  • 3 cucharadaspolvo de ají panca
  • 1 cucharadacomino
  • 1 cucharadapolvo de ajo
  • 2 cucharadaspolvo de vinagre de vino tinto
  • 1 cucharadasal marina fina
  • 1 cucharaditapimienta negra

Method

  1. Comienza colocando una sartén seca a fuego medio. Añade 3 cucharadas de polvo de ají panca, 1 cucharada de comino y 1 cucharada de polvo de ajo a la sartén. Remueve las especias constantemente con una cuchara de madera para asegurar un tostado uniforme. Sabrás que están listas cuando el aroma se vuelva rico y ahumado, y el color se oscurezca ligeramente.
  2. Retira la sartén del fuego y transfiere las especias tostadas a un plato para que se enfríen completamente. Este paso es crucial porque moler especias calientes puede liberar humedad no deseada, lo que podría afectar la textura de tu mezcla de marinada.
  3. Una vez que las especias se hayan enfriado, transfiérelas a un molinillo de especias o a un mortero.
