Untable de Garbanzos Peruano

Peruvian Chickpea Dip is the kind of dish that finds its way onto a family table with little ceremony but much anticipation. Born from the simplicity of daily cooking, it embraces the natural rhythm of the home kitchen. The chickpeas, often a pantry staple, are transformed with a generous hand of salt and a liberal touch of fat, mirroring the way Peruvian home cooks have done for generations. It's a dish that speaks to the everyday, written down as it is made, without flourish or pretense.

The dip is a smooth blend with the earthy depth of chickpeas, elevated by the nutty richness of tahini and the bright acidity of fresh lemon juice. Ingredients

  • 400 gramosgarbanzos
  • 2 cucharadastahini
  • limónexprimido
  • 2 dientesajo
  • 1 cucharaditacomino
  • al gustosal marina fina

Method

  1. Comience escurriendo y enjuagando 400 gramos de garbanzos a fondo bajo agua fría para eliminar cualquier exceso de sal y preservar su sabor natural. Coloque los garbanzos en un procesador de alimentos o un mortero grande. Tritúrelos hasta que alcancen una textura gruesa y granulada, asegurándose de que no queden garbanzos enteros. Esta textura le dará al Untable su característico toque rústico.
  2. Agregue 2 cucharadas de tahini a los garbanzos. Incorpore lentamente el jugo de un limón, permitiendo que la acidez equilibre la riqueza del tahini. Mezcle hasta que la mezcla se vuelva más suave, pero aún conserve algo de textura. El jugo de limón debería realzar el aroma y aclarar ligeramente el color de la mezcla.
  3. Pele y pique finamente 2 dientes de ajo. Agréguelos a la mezcla de garbanzos junto con 1 cucharadita de comino. Mezcle nuevamente, asegurándose de que el ajo esté distribuido uniformemente por todo el Untable. El comino añadirá un aroma cálido y terroso, mientras que el ajo debería estar presente pero no dominar.
  4. Sazone el Untable con sal marina fina al gusto. Comience con una pequeña pizca, luego mezcle y pruebe el Untable en un trozo de pan. Ajuste la sal gradualmente, ya que el pan le ayudará a medir el condimento necesario para el plato final. El sabor debe estar equilibrado, con la sal realzando la nuez natural de los garbanzos.
  5. Deje reposar el Untable durante al menos 10 minutos a temperatura ambiente. Este breve período de reposo permite que los sabores se mezclen, mejorando el sabor general.
