Bica

Bica is a classic Lisbon espresso, brewed with a touch of tradition that only the city's cafés have perfected. At home, it's made with a simplicity that respects its roots, using robust dark-roast coffee and a careful balance of water and sugar. This is the version that finds its way onto the breakfast table or concludes a leisurely lunch, bringing with it the comfort of familiarity and the warmth of routine.

The perfect bica should be intensely aromatic, with a bold bitterness softened by just enough sugar to accentuate its flavors. The twist of lemon peel adds a faint citrus note, brightening each sip without overpowering it. It's an unpretentious coffee, enjoyed without ceremony, offering a small moment of pleasure in the everyday.

Ingredients

  • 60 gramascafé torrado escuro — finamente moído
  • 400 mililitroságua — quase fervendo
  • 4 c. cháaçúcar — a gosto
  • 1tira de casca de limão — opcional

Method

  1. Comece preparando 60 gramas de café torrado escuro. Use uma cafeteira ou uma prensa francesa, garantindo que o café esteja recém-preparado e forte. Uma vez preparado, reserve para esfriar ligeiramente enquanto prepara os outros ingredientes.
  2. Em uma panela pequena, combine 400 mililitros de água com 4 c. chá de açúcar. Coloque a panela em fogo baixo e mexa até que o açúcar esteja completamente dissolvido. Isso garante que a doçura seja distribuída uniformemente na bebida final.
  3. Adicione uma tira de casca de limão à água com açúcar. Deixe a mistura ferver suavemente por alguns minutos, o que ajudará a infundir o sabor cítrico no xarope. Você saberá que está pronto quando puder sentir o aroma do limão.
  4. Retire a panela do fogo e deixe o xarope esfriar ligeiramente. Este período de descanso permite que os sabores se misturem, realçando o sabor geral da Bica.
  5. Uma vez que o xarope tenha esfriado, combine-o com o café preparado em uma jarra ou tigela grande. Mexa bem para garantir que os sabores estejam bem misturados. Prove a mistura e ajuste a doçura se necessário, adicionando mais açúcar se preferir uma bebida mais doce.
  6. Despeje a Bica em xícaras aquecidas se preferir quente, ou sobre gelo se gostar fria. Sirva imediatamente com uma fatia de limão ou um pau de canela como guarnição tradicional, garantindo que esteja na melhor temperatura para beber.
