The journey

A dandang is Indonesia's rice steamer — a tall pot with an insert, used so rice or sticky cakes cook in vapor. It is the cousin of a couscoussier and of a bamboo stack, born for a different grain and a different feast.

A rice cooker is the weekday machine. The dandang is the pot a celebration still wants.

In the kitchen

Part-boil or soak the rice, then steam until the grains stand. Keep the lid honest. Fluff and serve.

The Indonesian volume's rice ceremonies assume this steamer. A bamboo stack over a wok can stand in.
