The journey

The phin is Vietnam's coffee pot — a filter that sits on the glass, a press that holds the grounds, and a wait that is part of the drink. Condensed milk waits below. The drip is the ceremony of a Saigon morning and a Hanoi afternoon.

A machine can make coffee. It cannot make the pace of a phin.

Bloom the grounds with a splash, then fill. Wait until the drip slows. Stir the milk. Ice if the day is already hot.

The Vietnamese volume treats this cup as assumed furniture. Keep sweetened condensed milk beside the filter.
