The journey

A saj is a dome of metal over a flame. Levantine and Turkish bakers still drape a thin sheet of dough on it so the bread blisters in seconds. The same dome cooks minced meat and herbs for a weekday wrap.

In the kitchen

Heat until a drop of water vanishes. Drape, not press. Peel when the bubbles char. Fold while warm.
