A cake tin with a latch: cheesecakes and tortes that leave the pan without breaking.

The journey

German and Central European bakers needed a pan that would let go. The springform's latch and removable base made Käsekuchen and Sachertorte cousins possible in a home oven. The word traveled with the tin.

A regular cake pan can bake the same batter. Unmolding a cheesecake without a latch is a prayer.

In the kitchen

Butter and crumb the sides. Wrap the outside in foil if the recipe sits in a water bath. Release only when cool.

The German volume's cakes assume this tin. Eastern European coffee tables know it too.
