Antipasto Misto dell'Emilia

Serves 4 to 6 Appetizer meat, Appetizers

Antipasto Misto dell'Emilia

Antipasto Misto dell'Emilia originates from the Emilia-Romagna region, a place where culinary traditions are as rich and inviting as the landscape itself. Typically enjoyed as a starter, this dish is the perfect prelude to any meal, offering a taste of the region's renowned cured meats and cheeses. In homes across Emilia, it's prepared with an unmeasured generosity of olive oil and a pinch of salt, reflecting the relaxed, unfussy style of Italian family cooking.

The dish marries the silky texture of Prosciutto di Parma and mortadella with the robust flavors of salami Milano. Parmigiano-Reggiano adds a savory depth, while marinated artichokes provide a tangy contrast. Grissini, those crisp breadsticks, are perfect for scooping or wrapping around a sliver of meat. Each bite is a delightful balance of creamy, salty, and tangy notes, inviting you to savor the essence of Emilia-Romagna.

Ingredients

  • 150 gProsciutto di Parma
  • 150 gmortadella — sliced
  • 150 gsalami Milano — sliced
  • 200 gParmigiano-Reggiano — chunked
  • 200 ggrissini
  • 120 gmarinated artichokes
  • 4 tbspextra virgin olive oil
  • to tasteflaky sea salt

Method

  1. Begin by arranging your workspace with all the ingredients at hand. Slice the Prosciutto di Parma, mortadella, and salami Milano into thin, even slices. Cut the Parmigiano-Reggiano into small, bite-sized chunks. Drain the marinated artichokes and set them aside to remove excess liquid.
  2. In a small bowl, combine 4 tablespoons of extra virgin olive oil with a pinch of flaky sea salt. Stir gently to dissolve the salt slightly, allowing the flavors to meld. This will be used to dress the antipasto platter.
  3. On a large serving platter, arrange the sliced meats and Parmigiano-Reggiano in a visually appealing manner. Place the grissini on one side of the platter, ensuring they are easily accessible for guests to pair with the meats and cheese.
  4. Scatter the marinated artichokes around the platter, ensuring they are evenly distributed among the meats and cheese. This will provide a tangy contrast to the rich flavors of the meats and cheese.
  5. Drizzle the olive oil mixture over the entire platter, focusing on the meats and cheese to enhance their flavors. The oil should glisten on the surface, indicating a light, even coating.
  6. Finish the dish by sprinkling a little more flaky sea salt over the top, if desired, to taste. Serve the Antipasto Misto dell'Emilia immediately, allowing guests to enjoy the variety of textures and flavors.
