Method

  1. Begin by preparing the lamb liver. Cut 500 g of lamb liver into bite-sized cubes, roughly 2 cm each, ensuring they are uniform for even cooking. Pat the liver pieces dry with a paper towel to remove excess moisture, which will help them crisp up nicely when fried.
  2. In a shallow dish, add enough flour to coat the liver pieces. Lightly dust the liver cubes in the flour, shaking off any excess. This step helps create a crispy exterior when frying, a characteristic texture of Arnavut Ciğeri.
  3. Prepare the sumac onions by thinly slicing a large onion and mixing it with a generous sprinkle of sumac. This tangy, slightly lemony spice complements the richness of the liver. Set the onions aside to allow the flavors to meld.
  4. Heat a generous amount of oil in a large frying pan over medium-high heat. The oil should be enough to cover the liver pieces halfway. Once the oil is shimmering, indicating it is hot enough, carefully add the liver pieces in a single layer, ensuring they do not overcrowd the pan.
  5. Fry the liver pieces for about 3-4 minutes, turning them occasionally. Look for a deep golden-brown crust on the outside and a tender, slightly pink interior. This color contrast is key for the perfect Arnavut Ciğeri.
  6. Once the liver is cooked, remove it from the pan and place it on a plate lined with paper towels to drain any excess oil. Immediately sprinkle the liver with fine sea salt and freshly ground black pepper to taste while it's still hot, enhancing the flavors.
