Method

  1. Start by washing the 3 zucchini thoroughly under running water. Trim the ends and grate them using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters turn out crispy and not soggy.
  2. In a large mixing bowl, beat 2 eggs until the yolks and whites are fully combined. Add the grated zucchini, 4 tbsp flour, and a generous pinch of fine sea salt and black pepper. Mix everything together until you have a thick, cohesive batter. The flour should be evenly distributed, ensuring the fritters hold together during frying.
  3. Choose a heavy-bottomed skillet or frying pan for even heat distribution. Pour enough oil to cover the bottom of the pan generously, about 1/4 inch deep. Heat the oil over medium-high heat until it shimmers, indicating it's hot enough for frying.
  4. Using a tablespoon, scoop the zucchini mixture and carefully place it into the hot oil, flattening each scoop slightly with the back of the spoon to form a round fritter. Fry in batches to avoid overcrowding the pan, which can lower the oil temperature and result in greasy fritters.
