Hobak Jeon

Serves 4 to 6 vegetarian

Hobak Jeon

Hobak Jeon is a cherished Korean dish that embodies the simplicity and warmth of home cooking. Often found gracing family tables, it is especially popular during Chuseok, the Korean harvest festival. This dish reflects the way Korean families actually prepare it, with salt measured by instinct and oil poured generously, creating a crispy and savory delight that pairs perfectly with the season’s festivities.

When done right, Hobak Jeon offers a satisfying contrast between the tender zucchini and its golden, crispy exterior. The subtle sweetness of the zucchini shines through, enhanced by the savory soy dip that accompanies each bite. It’s a dish meant to be shared, inviting everyone to enjoy the comforting flavors and textures that are the hallmark of Korean home cooking.

Ingredients

  • 1zucchini
  • 2 tbspflour
  • 1egg
  • for fryingoil
  • soy dip — to serve
  • to tastefine sea salt

Method

  1. Start by washing the zucchini thoroughly under cold running water. Using a sharp knife, slice the zucchini into thin, even rounds, about 1/4 inch thick. This ensures they cook evenly and absorb the flavors well.
  2. In a shallow dish, spread out the 2 tablespoons of flour. Lightly coat each zucchini slice in the flour, shaking off any excess. This thin layer of flour helps the egg adhere better and gives the jeon a crispy texture.
  3. Crack the egg into a bowl and beat it well with a fork until the yolk and white are fully combined. Dip each floured zucchini slice into the beaten egg, ensuring it's completely covered. Let any excess egg drip off back into the bowl.
  4. Heat a generous amount of frying oil in a large non-stick skillet over medium heat. You'll want enough oil to cover the bottom of the pan to ensure even frying. Test the oil's readiness by dropping a small bit of egg into the pan; it should sizzle immediately.
  5. Carefully place the egg-coated zucchini slices into the hot oil in a single layer, without overcrowding the pan. Fry them for about 2-3 minutes on each side. You'll know they're done when they turn a light golden brown and the edges are crispy.
  6. Once cooked, transfer the zucchini slices to a plate lined with paper towels to drain any excess oil. While they are still hot, sprinkle them lightly with fine sea salt to enhance their flavor.
  7. Serve the Hobak Jeon immediately with soy dip on the side. The zucchini should be tender inside with a crispy exterior, making them perfect for sharing around the table.
