These crispy morsels are a staple on casual weeknight tables, offering a comforting satisfaction that brings families together. The recipe has been passed down through generations, with each cook adding a personal touch of salt and choosing their favorite vegetables to fry. This particular version stays true to the humble origins, embracing the spirit of sharing and abundance.

The bites should emerge from the hot oil with a golden, crunchy exterior, ready to be seasoned with a sprinkle of fine sea salt and a dash of black pepper. A squeeze of fresh lemon cuts through the richness, balancing the flavors perfectly. The vegetables inside remain tender, creating a delightful contrast with the crisp shell. Ingredients

Method

  1. Begin by preparing the vegetables. Choose a mix of seasonal vegetables such as sweet potatoes, carrots, and green beans to total 400 g. Wash them thoroughly, then cut them into bite-sized pieces, ensuring uniform size for even cooking. Pat them dry with a kitchen towel to remove excess moisture, which helps the batter adhere better.
  2. In a large bowl, combine 100 g of flour with a pinch of fine sea salt and black pepper to taste. Mix well to evenly distribute the seasoning. This seasoned flour will form the base of your batter, adding flavor and a crisp texture to the vegetables.
  3. Heat a deep frying pan or wok and fill it with oil for frying, ensuring there's enough to submerge the vegetables. Heat the oil over medium-high heat until it reaches about 170°C (340°F). You can test the oil's readiness by dropping a small piece of bread into it; if it sizzles and turns golden brown in about 30 seconds, the oil is ready.
  4. While the oil is heating, coat the prepared vegetables in the seasoned flour mixture. Toss them gently to ensure each piece is evenly coated. The flour will help create a crispy exterior once fried.
  5. Carefully add the flour-coated vegetables to the hot oil in batches, avoiding overcrowding, which can lower the oil temperature and result in soggy bites. Fry each batch for about 3-4 minutes, turning occasionally, until they are golden brown and crispy. The vegetables should be tender inside and have a crunchy exterior.
  6. Use a slotted spoon to remove the fried vegetables from the oil, allowing any excess oil to drain off. Place them on a paper towel-lined plate to absorb additional oil. This step ensures the bites remain crisp and not greasy.
  7. Once all the vegetables are fried, transfer them to a serving platter. Squeeze fresh lemon juice over the top to add a bright, tangy flavor that complements the fried bites. Finish with a light sprinkle of fine sea salt to enhance the taste, and serve immediately while hot and crispy.
