Ingredients

  • 400 gshrimp or white fish
  • 100 gflour
  • 1egg

Method

  1. Start by preparing the seafood. If using shrimp, peel and devein them, then pat dry with a paper towel. For white fish, cut it into bite-sized pieces and ensure it's dry to help the batter adhere better. Set the prepared seafood aside.
  2. In a mixing bowl, combine 100 g of flour with a pinch of fine sea salt. Crack in 1 egg and whisk until you have a smooth batter. The batter should be thick enough to coat the back of a spoon but still fluid enough to drip slowly.
  3. Heat a generous amount of oil in a large frying pan over medium-high heat. The oil should be about 1 cm deep to allow the fritters to fry evenly. Test the oil by dropping a small amount of batter into it; the batter should sizzle and rise to the surface immediately.
  4. Dip each piece of seafood into the batter, ensuring it's fully coated, then carefully place it into the hot oil. Fry in batches to avoid overcrowding the pan, which can cause the temperature to drop and make the fritters greasy.
  5. Fry the seafood pieces until they are golden brown and crispy on the outside, about 3-4 minutes per side. The seafood should be opaque and firm to the touch, indicating it is cooked through. Remove the fritters with a slotted spoon and drain on paper towels.
  6. Once all the fritters are cooked, sprinkle them lightly with fine sea salt while still hot. This enhances the flavor and gives them a delightful crunch. Serve immediately with lemon wedges on the side for a fresh, tangy contrast.
