Mücver, a beloved staple of Aegean Turkish cooking, finds its way to the table when the air warms and zucchini is abundant. This dish, often prepared in family kitchens, reflects a tradition of hand-measured salt and a generous use of oil, transforming humble ingredients into something memorable. It's the kind of recipe passed down through generations, capturing the essence of home-cooked comfort.

Ingredients

  • 3zucchini — grated
  • 2eggs
  • 100 gfeta
  • dill — chopped
  • 4 tbspflour
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Start by grating the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial to prevent the mixture from becoming too watery, which would affect the texture of the mücver.
  2. In a large mixing bowl, combine the drained zucchini with 2 eggs, 100 g of crumbled feta, and a handful of finely chopped dill. Mix well until the ingredients are evenly distributed. The eggs will help bind the mixture together, while the feta adds a salty, creamy flavor.
  3. Gradually add 4 tablespoons of flour to the zucchini mixture, stirring as you go. The flour will help to hold the mixture together during cooking. Season with fine sea salt and black pepper to taste, keeping in mind that the feta is already salty.
  4. Heat a generous amount of oil in a large non-stick frying pan over medium heat. You want enough oil to cover the base of the pan to ensure the mücver cooks evenly and develops a crispy exterior.
  5. Once the oil is hot, spoon heaping tablespoons of the zucchini mixture into the pan, flattening them slightly with the back of the spoon. Fry in batches, ensuring not to overcrowd the pan, which would lower the oil temperature and result in soggy fritters.
  6. Cook each mücver for about 3-4 minutes on each side, or until they are golden brown and crispy. The edges should be crisp, and the center should be set but still moist. Adjust the heat as necessary to prevent burning.
  7. Once cooked, transfer the mücver to a plate lined with paper towels to drain any excess oil. Taste one and adjust the seasoning with more salt if needed. Serve immediately while the mücver is still warm and crispy, perfect for sharing.
