Midye Dolma, a beloved staple of Istanbul's bustling street food scene, finds its roots in the city's vibrant culinary tradition. Vendors expertly prepare these stuffed mussels, a dish that has become synonymous with the rhythmic energy of Istanbul's streets. This home version captures that essence, distilling the experience into something you can share at your own table, just as Turkish families have done for generations.

Each bite of Midye Dolma offers a harmonious blend of tender mussels and spiced rice, enriched by the sweetness of currants and the subtle crunch of pine nuts. Ingredients

  • 20mussels
  • 150 grice
  • 1onion
  • 2 tbsppine nuts
  • 2 tbspcurrants
  • 80 mlolive oil
  • to tastefine sea salt and black pepper

Method

  1. Begin by cleaning the mussels thoroughly. Scrub the shells under cold running water and remove any beards by pulling them towards the hinge of the shell. Discard any mussels that are open and do not close when tapped lightly.
  2. Finely chop the onion and set it aside. Rinse the rice under cold water until the water runs clear to remove excess starch, then drain it well. This will help achieve separate grains in the final dish.
  3. In a large pan, heat 80 ml of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent and soft, stirring occasionally to prevent browning. This should take about 5 minutes, and the onions should be fragrant and sweet.
  4. Add 2 tbsp of pine nuts to the pan and continue to cook until they are golden brown. Stir frequently to ensure even toasting and to prevent burning, which can happen quickly.
  5. Stir in the 150 g of rinsed rice, ensuring each grain is coated in oil. Add 2 tbsp of currants, and season with fine sea salt and black pepper to taste. Cook for a few minutes until the rice becomes slightly translucent around the edges.
  6. Pour in 300 ml of water and bring the mixture to a gentle simmer. Cover the pan with a lid and reduce the heat to low. Cook until the rice absorbs the liquid and is tender, with a slightly chewy texture.
  7. Remove the pan from heat and let it sit, covered, for about 10 minutes. This resting period allows the rice to finish cooking in its own steam, ensuring a fluffy texture.
  8. Once the rice mixture has cooled slightly, stuff each mussel with a spoonful of the rice mixture. Close the shells tightly and arrange them in a large pot in a single layer.
  9. Add a small amount of water to the pot, just enough to create steam, and cover it with a lid. Cook over medium heat until the mussels have opened and the rice is heated through, about 5 to 7 minutes. The mussels should be plump and juicy.
  10. Finish with a sprinkle of fine sea salt to taste. Serve the Midye Dolma warm or at room temperature, encouraging guests to enjoy them with their hands, as is traditional.
