Moo Krob

Serves 4 to 6 meat

Moo Krob

Moo Krob, a beloved staple in Thai cuisine, is often enjoyed at bustling street food stalls where crispy pork reigns supreme. This home-cooked version captures the essence of those lively gatherings, where families and friends come together to savor the satisfying crunch of pork belly. The dish is a reflection of the Thai cook's intuition, with salt and spices measured by feel, not by rule.

Expect a delightful symphony of textures and flavors: the crackling skin, tender meat, and a hint of aromatic five-spice. Each bite is enhanced by a dip in nam jim, the quintessential Thai dipping sauce, bringing a zing that complements the richness of the pork. Serve it alongside a mound of fluffy rice, and you have a meal that celebrates simplicity and flavor.

Ingredients

  • 500 gcrispy pork belly
  • nam jimto dip
  • 1 tspfine sea salt
  • 1 tspfive-spice
  • rice — to serve

Method

  1. Start by ensuring your 500 g of crispy pork belly is at room temperature, which helps it cook evenly. Prepare your dipping sauce, nam jim, and set it aside for serving. Measure out 1 tsp of fine sea salt and 1 tsp of five-spice powder, keeping them ready for seasoning.
  2. Heat a large skillet or wok over medium-high heat. Add a small amount of oil, just enough to coat the bottom, to prevent sticking and help distribute the heat evenly. Once the oil is shimmering, sprinkle the five-spice powder into the pan, stirring quickly to release its aroma and infuse the oil with flavor.
  3. Add the crispy pork belly to the pan in a single layer, ensuring each piece has contact with the hot surface. Fry the pork belly, turning occasionally, until it is heated through and the skin is extra crispy, about 5 to 7 minutes. You'll know it's ready when the skin is golden brown and crackling, and the aroma is rich and savory.
  4. Remove the pork belly from the pan and drain any excess oil on a paper towel-lined plate. Immediately sprinkle the pork with the fine sea salt, tossing gently to ensure even coverage. The salt will enhance the flavors and add to the crispiness of the skin.
  5. Serve the crispy pork belly hot, accompanied by the prepared nam jim for dipping. Pair it with steamed rice to balance the richness of the pork. Arrange everything on a platter for sharing, as is traditional in Thai family meals.
