This dish embodies the essence of home-style Pakistani cooking, where each family adds its own touch, seasoning the beef filling with a pinch of this and a dash of that, always relying on instinct and experience.

The bites deliver a satisfying crunch from the crispy pastry shell, encasing a savory filling of tender ground beef and sweet onions. The generous use of salt and pepper lets the simple ingredients shine, creating a warm, comforting experience. These are best enjoyed hot, straight from the pan, encouraging a shared moment around the table.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers

Method

  1. Begin by finely chopping 1 onion. This will ensure even cooking and a uniform texture in the filling. Set the chopped onion aside and prepare 300 g of ground beef by breaking it apart with your fingers to ensure there are no large clumps.
  2. In a large skillet, heat 2 tablespoons of oil over medium heat. Once the oil shimmers, add the chopped onion. Sauté the onion until it turns translucent and soft, releasing a sweet aroma, which should take about 5 minutes.
  3. Add the ground beef to the skillet with the onions. Use a wooden spoon to break the meat into small pieces, ensuring it cooks evenly. Cook until the beef is browned and no pink remains, and the mixture is fragrant, about 7-10 minutes.
  4. Season the beef and onion mixture with fine sea salt and black pepper to taste. Stir well to combine, ensuring the seasoning is evenly distributed throughout the meat.
  5. Lay out the 12 pastry wrappers on a clean, dry surface. Place a spoonful of the beef mixture in the center of each wrapper, being careful not to overfill, which could cause the pastry to tear.
  6. Fold each pastry wrapper over the filling to form a triangle or rectangle, depending on the shape of your wrappers. Press the edges firmly with your fingers or a fork to seal, ensuring the filling is securely enclosed.
  7. In a deep frying pan, heat enough oil over medium-high heat to submerge the pastry bites. Once the oil is hot, carefully add the pastry bites in batches, frying until they are golden brown and crisp on all sides, about 2-3 minutes per side.
  8. Remove the pastry bites from the oil using a slotted spoon and drain on paper towels to remove excess oil. Serve immediately while they are hot and crisp, seasoned with a final sprinkle of salt if desired.
