Method

  1. Begin by heating a generous amount of oil in a deep frying pan over medium-high heat. Once the oil is shimmering, carefully add the 400 g (14 oz) of matchstick-cut potatoes in batches to avoid overcrowding. Fry them until they turn golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to transfer the fried potatoes to a paper towel-lined plate to drain excess oil.
  2. In a wide pan, over medium heat, add the 150 g (5 oz) of diced ham. Stir occasionally, allowing the ham to warm through and release its aroma, about 2-3 minutes. Add 1/2 cup of peas to the pan, stirring to combine with the ham, and cook until the peas are heated through and bright green.
  3. Gently add the crispy potatoes to the pan with the ham and peas, stirring to combine. Ensure the potatoes are evenly distributed and coated with the flavors from the ham and peas.
  4. In a separate bowl, beat the 4 eggs until the yolks and whites are fully combined. Pour the beaten eggs over the potato mixture in the pan. Using a spatula, gently scramble the eggs, folding them into the potato mixture. Cook until the eggs are just set but still soft, making sure the potatoes retain some of their crunch.
