Thai Fried Bites

Thai Fried Bites are a beloved staple at Thai home tables, where they're crafted with a generous hand for sharing. This dish is all about simplicity and flavor, combining fresh vegetables with a light flour coating, then fried to a crisp perfection.

The taste is a delightful balance of savory and fresh, with a hint of lemon to brighten each bite. Salt and black pepper are added to taste, allowing the natural flavors of the vegetables to shine through. It's a dish that brings people together, enjoyed in the comfort of home.

Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Start by washing and drying 400 g of vegetables thoroughly. Choose a mix of your favorite vegetables such as bell peppers, carrots, or broccoli. Cut them into bite-sized pieces, ensuring they are uniform in size for even cooking.
  2. In a large mixing bowl, combine the 100 g of flour with a pinch of fine sea salt and black pepper to taste. This will be your coating mixture. Toss the vegetable pieces in the flour mixture, ensuring each piece is evenly coated. Shake off any excess flour.
  3. Pour enough oil into a deep frying pan or wok to submerge the vegetable pieces halfway. Heat the oil over medium-high heat until it shimmers and a small piece of vegetable dropped in sizzles immediately.
  4. Carefully add the floured vegetables to the hot oil in batches, making sure not to overcrowd the pan. Fry each batch until the vegetables are golden brown and crispy on the outside, which should take about 3 to 5 minutes per batch. Use a slotted spoon to remove the vegetables and drain them on paper towels.
  5. Once all the vegetables are fried, transfer them to a serving platter. Squeeze fresh lemon juice over the top to add brightness and enhance the flavors. Taste and adjust the seasoning with more fine sea salt and black pepper if needed.
  6. Serve the Thai Fried Bites immediately while they are hot and crispy, encouraging everyone at the table to share and enjoy this traditional Thai home-cooked dish.
