Boza

Boza, a cherished Turkish winter drink, has been warming hearts and hands for centuries. Traditionally enjoyed during the cold months, this fermented millet beverage finds its roots in the cozy kitchens of Turkish homes. It's a winter staple that has been lovingly passed down through generations, offering comfort and warmth to all who gather around the table.

The distinct taste of boza is a delightful balance of tangy and sweet, with a creamy texture that coats the palate. Topped with a sprinkle of cinnamon and a handful of roasted chickpeas, each sip is a unique experience. The gentle spice of the cinnamon and the crunch of the chickpeas complement the drink’s rich, fermented flavor, making it a soothing treat on chilly nights.

Ingredients

  • 400 mlboza
  • to finishcinnamon
  • roasted chickpeas — to serve

Method

  1. Begin by ensuring the boza is properly chilled. Pour the 400 ml of boza into a clean glass or ceramic container and place it in the refrigerator. Allow it to chill for at least 2 hours until it reaches a cold temperature. This chilling process is crucial for achieving the refreshing, slightly tangy flavor that is characteristic of boza.
  2. Once the boza is chilled, measure out the cinnamon and roasted chickpeas. Use a small spoon to sprinkle a light dusting of cinnamon over the surface of the boza. Be careful not to overdo it, as too much cinnamon can overpower the delicate flavors of the boza.
  3. Gently stir the boza with a spoon to combine the cinnamon. Stirring should be done slowly and carefully to avoid losing the aromatic qualities of the boza. The goal is to evenly distribute the cinnamon without creating bubbles or foam.
  4. Pour the boza into traditional glassware, such as a small glass or a cup with a wide mouth. This allows the aromas to be fully appreciated with each sip. The glassware should be clean and dry to prevent any dilution or alteration of the boza's flavor.
  5. Finish by adding a handful of roasted chickpeas on top of each serving. The chickpeas should float on the surface, providing a crunchy contrast to the smooth, creamy texture of the boza. Serve immediately to enjoy the full spectrum of flavors and textures.
