Clericó

Clericó is the refreshing white-wine sangria that graces Argentinian tables during the festive season. A cherished tradition for Christmas and New Year celebrations, it finds its place in pitchers on patios, capturing the essence of summer in December. This vibrant concoction infuses the air with the promise of joy and relaxation, a liquid embrace that complements the exuberance of the holiday spirit.

Clericó combines chilled white wine with sun-kissed fruits like apples, strawberries, or peaches, enhanced by citrusy oranges and a hint of sugar. A splash of sparkling water or cider adds effervescence, creating a lively, refreshing drink reminiscent of Argentinian summer days.

Ingredients

  • 1 bottlewhite wine, chilled
  • 1orange, sliced
  • 1apple, diced
  • 1 cupstrawberries or peaches, sliced
  • 2 tbspsugar
  • sparkling water or cider — optional

Method

  1. Start by preparing your fruit. Slice 1 orange into thin rounds, dice 1 apple into small cubes, and slice 1 cup of strawberries or peaches. Place all the fruit into a large mixing bowl.
  2. Sprinkle 2 tablespoons of sugar over the fruit. Use a spoon to gently mix the fruit and sugar together, ensuring each piece is lightly coated. Allow the fruit to macerate for 20 minutes. This process will draw out the natural juices and soften the fruit, enhancing its flavors.
  3. After the fruit has macerated, transfer it to a large pitcher. Pour 1 bottle of chilled white wine over the fruit. Stir gently to combine. Place the pitcher in the refrigerator to chill further, allowing the flavors to meld together.
  4. Just before serving, decide if you want to add a bubbly touch. If so, pour sparkling water or cider into the pitcher. This should be done right before serving to maintain the effervescence.
  5. To serve, pour the Clericó into glasses, making sure to include some fruit in each glass. The fruit should be vibrant and juicy, with a slightly softened texture. Enjoy this refreshing drink as a festive holiday treat.
