Japanese Spiced Tea

Japanese Spiced Tea is a beloved comfort found in many Japanese homes, especially during the colder months when warmth is craved. This home-style version celebrates the art of intuitive cooking — salt is judged by hand, and a generous touch of fat adds depth, embodying the spirit of sharing at the dining table. It's a recipe passed down through generations, where precision gives way to personal taste and familial tradition.

This tea should envelop you in a gentle embrace of warmth, with the spices subtly mingling with the tea's earthiness, balanced by a hint of sweetness. It's not just a drink but a fragrant experience that invites relaxation and conversation, a small yet profound ritual in the rhythm of everyday life.

Ingredients

  • 2 tbsptea leaves
  • 500 mlwater
  • to tastespices
  • to tastesugar

Method

  1. Begin by bringing 500 ml of water to a gentle boil in a medium saucepan. Use a pan with a lid to help maintain the temperature and infuse the flavors more effectively. Once the water reaches a rolling boil, reduce the heat to low to maintain a gentle simmer.
  2. Add 2 tablespoons of tea leaves to the simmering water. Stir gently with a wooden spoon to ensure the leaves are fully submerged, allowing them to release their flavors into the water. Cover the pan with the lid and let it steep for about 3 to 4 minutes, until the water takes on a deep, rich color and a fragrant aroma fills the kitchen.
  3. While the tea is steeping, prepare your spices. Choose a blend that suits your taste — common choices include cinnamon, cardamom, or star anise. Add the spices to the tea, starting with small amounts to avoid overpowering the delicate tea flavor. Stir gently to combine, allowing the spices to infuse their aroma into the tea.
  4. Taste the tea and adjust the sweetness by adding sugar to your preference. Stir well to dissolve the sugar completely. The tea should have a balanced taste, with the sweetness complementing the spice and tea flavors without overwhelming them.
  5. Once the desired flavor is achieved, strain the tea into a teapot or serving vessel to remove the tea leaves and spices. Use a fine mesh strainer to ensure a smooth, clear tea. This step is crucial to prevent any bitterness from over-steeping.
  6. Serve the Japanese Spiced Tea immediately in traditional glassware or your favorite teacups. The tea should be warm and aromatic, inviting you to enjoy its comforting flavors. Share with family or friends, embracing the communal aspect of Japanese home cooking.
